Farm to Table Restaurant Finding Loyal Patrons

The Dish Café, located in Daniels, WV, is serving up fantastic cuisine that is really good for you.

Open now 2 years, the Raleigh County eatery is a farm to table restaurant, cooking up original recipes using local produce and proteins as much as possible.

Some of the regular menu items include the falafel salad, Hawaiian flatbread, the roasted porketta sandwich, the black bean burger, and their signature 10 oz rib eye.

Chef Devin Billeter is an owner and also the operations manager.

He serves Italian sausages from Sherwood Family Farm in Greenbrier County, smoked trout from Gary Redden in Shady Spring, strawberries from a Fayette County grower, honey and free range eggs from Iris Farms, and grass fed beef from Swift Level Farm in Lewisburg. 

As he prepared for a recent Taco Tuesday dinner crowd, he featured certified Angus beef from a Charleston producer.

“It’s a lot of fun not only to build the recipes when you have a passion for food and create the items, but when you know what the result is going to be, that’s where the pride comes in.” said Billeter.

The result is a healthier and delicious dining-out option.  The Dish is based on a lifestyle embraced by all three couples who own it.

“It was funny because people said, ‘well you know, people around here don’t like fru-fru food, they want everything fried, they’re not going to respond well,’” said Michelle Rotellini, another owner.

But it is going well. The Dish Café is currently rated the number one area restaurant on Trip Adviser.

Billeter says The Dish is committed to keeping its prices lower or equal to what competitors are charging while still using ingredients that costs 2 times to sometimes 5 times more.

“It is much more expensive, and so the success of our restaurant is going to be continued on the volume that we have,” said Billeter.
